Steam ½ kg grated pumpkin.
Make coconut milk by blending fresh coconut and some water in a blender until smooth. Alternatively, you can mix vegan coconut milk powder with lukewarm water. Adjust the amount of water according to the desired consistency.
Once the pumpkin becomes soft, transfer it to a pan with a small amount of water and cook it over medium heat.
Add 3 to 4 spoons of jaggery powder to the cooked pumpkin and mix well.
Turn off the flame and add coconut milk to the pumpkin mixture.
Refrigerate the kheer for some time to cool.
Garnish with roasted nuts and seeds.
