If the goal is to consume the wheat at the germination stage rather than allowing it to grow into full wheatgrass blades; then instead of 24 hours, allow the seeds to sprout for 2-3 days after germination i.e. soak the seeds for 12 hours, let them germinate and sprout for 2-3 days before harvesting.
