How is Jaggery whole different from Jaggery Powder?
Half of the process for making jaggery powder is identical to the process for producing jaggery whole. However, jaggery powder undergoes additional processing steps, making it slightly more refined than jaggery whole. To create jaggery powder, the initial step involves producing jaggery whole. This solid jaggery is then subjected to a more extended drying period to reduce its moisture content significantly before it is finely ground into powder form. As a result, jaggery whole typically retains more moisture than jaggery powder. This additional processing step of drying and grinding is what sets jaggery powder apart from its solid counterpart.
